I don't understand where your problem is coming from.
To test, I added the HERE (.poi) files for France.
So there are the files for Poland and for France.
As the screenshots show, all the signs are displayed!

In the route: A_Fast_Food.zip\ui_nextgen\icons\poi\FastFood.icons
Open the file FastFood.icons with Notepad and search the text:
[Restaurant.Fast_Food.McDonald's]
Change it, to do so:
[Restaurant.Fast_Food.McDonald_s]
Exit and save the changes in the file.
Delete the old file poi_visiblities.txt. Copy in the folder ux the new A_Fast_Food.zip and start up the iGO.
Check the visibility of the category McDonald's.
Important - Comply with the winrar version requirement, to not damage the ZIP archive!

The McDonalds icon appeared.
Le Pain Quotidien still shows the default.
