Although externally physically similar, they are quite different units so it depends which one you have, or maybe you mean have one of each. The main differences:
1 StreetPilot 2610 can't use NT maps such as this ID NT 2013.30 and is limited to old outdated Garmin non-NT maps [if available] or third party maps such as OSM.
2. The 2720 is NT capable and can use the latest Garmin maps, subject to memory space limitations.
3. 2610 is easier to update because the detail map is stored on a CompactFlash card. I think it is only capable of using 2 GB max. size card though. It is a simple matter to change the detail map by adding your compatible map named gmapsupp.img to a Garmin folder in the root of the card. You can just swap out cards if you want to keep the original map and use the same card, either back it up and delete it, or just rename the original map and add the new one on the same card.
4. 2720 has no media card slot and updating the maps was normally done using MapSource. I'm not 100% sure if BaseCamp/MapInstall will also work with it but i assume so. It is also possible to send an image named as gmapsupp.img to the internal memory using a *.bat file to overwrite the current detail map. There's a Tut thread here: [Only registered and activated users can see links. ]. Simplest method is in Post #3. Check the [Only registered and activated users can see links. ] for using MS and BC/MI. Using the bat file method with the map named as gmapprom.img, your original detail map will be destroyed because it'll be overwritten. You may be able to preserve it by sending the new another detail map as gmapsupp.img if you have room on the internal memory. If you need to replace the basemap in either 2610 and/or 2720 because it doesn't cover ID, you maybe can send it using the bat file as gmapbmap.img to overwrite the US loaded Americas/Pacific base map.

How much the difference between the old and the new map ? it is just interface ?
I like this 2610 because it can use AAA bettery which can be handy.
