Now in order to view say a topo map I have to uncheck CN North America correct?

Mostly if the topo is routable yes, if it's not routable it depends on topo map (in devices, especially outdoors, may depend on map transparency, drawing priority and on choosen profile in device)

Do I have to be in the actual Topo area (on the ground) in order to see the details on the unit? Would I also have to be on a lake to see the details of that lake?

No, if gps shows the map,you can browse it tapping and zooming to see details.
