Right then. Firstly to find out definitely what my working 480x272 was actually displaying on the map, I changed the content of {SKIN}\ui_igo8_da\common\speedwarn.spr to increase STRIPES=30 to STRIPES=50. Sure enough, when they displayed, they were all screwed up with about 1.5 cameras showing. So the 480x272 deffo uses that speedwarn.spr and the *.bmp that is named within the .spr file, which in my case is Bmp = "ui_igo8_da/common/speed_cams_NoA_TT.bmp". I also changed the .bmp file and the camera icons changed as might be expected.
I had a look for camera related files in the {SKIN}\ui_igo8_da\480_272 folder and couldn't find any likely *.bmp files.
So on to the 7" 800x480
I repeated the changing stripes exercise on {SKIN}\ui_igo8_da\common\speedwarn.spr but that made no difference to the displayed icon on the map. I then looked for likely *.bmps in the {SKIN}\ui_igo8_da\800_480 folder and could only find one called kamerak.bmp and its associated kamerak.spr file. The STRIPES in the *.spr are 188 and the icons are the big ones that are displayed when you go to add a camera manually.
Conclusion. The 480x272 uses the speedwarn.bmp in the \common folder on the 5" but the 800x480 on the 7" doesn't and I can't find the file that it does use :=( (yet)
Any other ideas anyone? In the meantime, I'll look for likely *.spr files and screw around with the STRIPES until I find the one that screws up the map icons.
Sorted. Thanks to Gigya for the resolution folder hint.
I copied speedwarn.bmp and speedwarn.spr from the \common folder into the \800_480 folder just on the offchance and it now works just fine and dandy. Just have to sort out the icons and make them a little bigger, perhaps, if I can find the enthusiasm.

Later: Resized my 30x30 icons up to 40x40 and got rid of the alpha layer as iGO8 applies transparency that makes them harder to see. Result!
